Red Pepper Penne

  • 3 tbsp olive oil
  • 2 sliced onions
  • 4 red peppers, sliced
  • 25g basil leaves
  • 300g wholemeal penne pasta
  • 2 tbsp grated parmesan
  • ½ lemon, juice only
  • Chilli flakes
  • Heat the oil in a large frying pan and gently cook the garlic, onion and peppers with half the basil for about 30 mins, or until very tender and golden. Meanwhile, cook the penne in boiling salted water until al dente, and drain.
  • Stir the pepper mixture, grated cheese and remaining basil into the pasta, tossing well together to combine. Grind in some black pepper, add a squeeze of lemon and a pinch of chilli flakes, and serve with more cheese for sprinkling.
