Red Wine Chorizo Tapas
- 2 tbsp olive oil
- 1 shallot, sliced
- 1 garlic clove, chopped
- 300g chorizo, cut diagonally into 2.5cm chunks
- 2 bay leaves
- 200ml red wine
- Heat up a frying pan, and drizzle in the olive oil. Soften the garlic and onion for a couple of minutes, then chuck in the chorizo to fry for 2 minutes, or until the oil is released. Add the bay leaves and wine, and cook until the wine has reduced and covers the chorizo in a thick glaze. Serve with bread and olives.
