Ribs and Sweet Potato Hotpot
- 3 tbsp hoisin sauce
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 3 tbsp chicken stock
- 500g pork ribs, cut into individual ribs
- 2 tbsp cornstarch
- 1 tbsp sesame oil
- 1 sliced garlic clove
- 1 tbsp grated ginger
- 4 sliced spring onions
- 1 red capsicum, cut into chunks
- 1 sweet potato, cut into chunks
- 100g snow peas, cut into strips
- Mix the hoisin, soy, rice vinegar and stock in a bowl and add the ribs. Leave to marinate for at least an hour. When ready, heat the oven to 150C. Drain the ribs (reserve the marinade) and toss in the cornstarch. Heat the sesame oil in a wok and cook the ribs, garlic, ginger and spring onion until the ribs are golden. Season well, pour in the remaining marinade with 100ml water and bring to the boil.
- Tip the lot into a casserole and stir in the sweet potato and capsicum. Cover and cook in the oven for 50 mins, then stir in the snow peas and cook for 10 mins more. Serve with a sprinkling of spring onion and whatever sides you fancy.
