Roast Cherry Tomato Pasta
- 400g cherry tomatoes
- 35g butter
- 1 tsp balsamic
- 200g pasta
- Salt and pepper
- Parmesan to serve
- Preheat the oven to 180C. Toss the tomatoes in a baking dish, and scatter the butter over the top. Drizzle with balsamic, season well, and roast in the oven for 50 minutes or until the tomatoes have collapsed and the butter and juices have made a sauce.
- Once the tomatoes are almost cooked, prepare the pasta according to packet instructions. Drain, return to the pan, and toss in the cooked tomatoes and sauce, stirring well to break them down further. Cook for 3 mins on a medium heat, season again, and serve with parmesan. Easy!
