Roast Cod with Parsley Crust
- 675g cod fillet (or similar flaky white fish)
- 85g breadcrumbs
- 3 tbsp freshly chopped parsley
- 2 crushed garlic cloves
- Grated zest of 1/2 lemon
- 60g melted butter
- A squeeze of lemon juice
- Salt and pepper
- Lemon wedges to serve
- Season the cod well with salt and pepper. In a bowl, mix together the breadcrumbs (which are best if slightly stale) with the parsley, garlic, lemon zest, and salt and pepper. Add the melted butter and the lemon juice, and give it all a good mix with your fingers.
- Place your fish fillet in an oven dish, and press the breadcrumb mix onto the top of the fillet with your hands to form an even crust. Bake at 220C for about 25 minutes, until cooked through and the crust browned. Serve hot with a fresh green salad, or a handful of fries.
