  • 2 sheets of lamb ribs, cut into chops
  • 2 tbsp olive oil
  • 2 tsp chopped thyme
  • Salt and pepper
  • For the Seasoning
  • 1 tbsp smoked paprika
  • 2 tbsp garlic powder
  • 1 tbsp each of cumin seeds and dried oregano
  • 2 tsp chilli flakes
  • 1 tbsp salt
  • ½ tbsp cracked pepper
  • 1 tbsp brown sugar
  • Preheat the oven to 170C. Place the ribs in a roasting tray and drizzle with oil, then sprinkle with salt, pepper and thyme. Roast for 2 hours. Meanwhile, dry fry the spices for the seasoning in a pan until aromatic, and tip all of the ingredients for the seasoning into a spice grinder and grind to a fine powder.
  • Remove the ribs from the oven and sprinkle with the seasoning mixture. Finish with a sprinkling of chives and mint, and serve hot with all your favourite sides.
