Roast Monkfish with Parsley and Lemon Butter
- 350g monkfish fillets
- 40g butter
- 1 lemon
- Small bunch of flat leaf parsley leaves, chopped
- Preheat the oven to 220C. Lightly season the fish with salt and pepper, then fry in a pan for 2 mins on each side until just golden. Transfer the pan to the oven and roast for 8 mins.
- While the fish is roasting, grate the zest of the lemon and mix with the juice of half the lemon. Melt the butter in a small pan, and stir in the lemon juice, zest, and parsley. Season a little, cook for 1 min, then pour all over the roasted fish fillets to serve.
