- 1 large cauliflower, cut into small florets
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp garlic powder
- 8 small corn tortillas, warmed
- 1 avocado, mashed with lime juice and salt
- For the Passionfruit salsa
- Pulp of 4 passionfruit
- ½ ripe mango diced
- 1 small red chilli finely sliced
- 1 tbsp lime juice
- ¼ cup fresh coriander
- Preheat oven to 220°C. Toss cauliflower with olive oil, paprika, cumin and garlic powder. Spread on a lined baking tray and roast for 25–30 minutes, turning halfway, until well caramelised and slightly crispy at the edges.
- Make the salsa: combine passionfruit pulp, mango, chilli, lime juice and coriander. Season with salt.
- Spread mashed avocado on each warmed tortilla. Add roasted cauliflower and top generously with passionfruit salsa. Serve immediately.
