Saganaki Prawns



  • 2 tbsp olive oil
  • 1 diced onion
  • 2 sliced garlic cloves
  • 150ml white wine
  • 400g chopped tomatoes
  • 3 sprigs of oregano
  • Pinch of sugar
  • 200g large raw peeled prawns
  • 50g crumbled feta
  • Preheat the oven to 200C. Heat a tbsp of oil in a frying pan and cook the onion for 5 mins, then add the garlic and cook for 3 mins more. Pour in the wine and simmer for 3 mins, then add the tomatoes, sugar and oregano sprigs. Simmer for 8 mins, then tip into an oven dish.
  • Scatter the prawns on top of the tomato mixture, then sprinkle with crumbled feta and drizzle with 1 tbsp of oil and some seasoning. Add to the oven and bake for 10 mins, then serve with crusty bread for dipping.
