Salmon and Leek Pasta Bake

  • 350g penne pasta
  • 1 tbsp olive oil
  • 250g sliced leeks
  • 2 crushed garlic cloves
  • 100g soft cheese
  • 100ml whole milk
  • 250g peas
  • 400g tin of salmon, drained and flaked into chunks
  • 10g chopped parsley
  • 100g grated cheddar
  • Preheat the oven to 180C, and boil the penne in salted water until al dente. Drain well. Meanwhile, cook the leeks in the oil for 10 mins to soften, then add the garlic and fry for 1 minute more. Reduce the heat and stir in the soft cheese and milk, then season and add the peas, salmon and parsley. Cook for 2 mins.
  • Transfer the mixture to a baking dish and stir through the drained pasta. Scatter with the grated cheese and bake for 20 mins or until golden and bubbling. Scatter with some more parsley, and serve with your choice of greens.
