Salmon and Sesame Salad

  • 250g sliced new potatoes
  • 150g French beans, trimmed
  • 2 salmon fillets
  • 80g mixed salad leaves
  • 4 clementines, 3 sliced and 1 juiced
  • Handful of chopped basil and coriander
  • For the Dressing
  • 2 tsp tamari
  • 2 tsp sesame oil
  • ½ lemon, juice only
  • 1 chopped red chilli
  • 2 tbsp finely diced onion
  • Steam the beans and potatoes in a steamer basket over boiling water for about 8 mins. Arrange the fish fillets on top, steam for 8 mins more, or until cooked through and flaky.
  • Meanwhile, make the dressing by mixing all of the ingredients together. Serve by adding the warm beans and potatoes, and the clementine slices, on the salad leaves. Place the salmon fillets on top, and scatter with herbs and drizzle over the dressing.
