  • 500g calamari rings
  • 150g cornflour
  • 2 tsp Chinese five spice
  • 2 tsp fine salt
  • 1 tsp white pepper
  • Oil for deep-frying
  • 1 long red chilli, thinly sliced
  • Lemon wedges, to serve
  • Mix cornflour, five spice, salt and white pepper in a large bowl. Pat calamari dry, then toss in the spiced flour to coat.
  • Heat oil to 180°C in a deep pan and fry calamari in batches for 2-3 mins until crispy and just golden.
  • Drain immediately on paper towel and serve hot with sliced chilli and lemon wedges.
