Salt and Pepper Prawn Skewers

  • 20 peeled king prawns
  • 2 tsp crushed rainbow peppercorns
  • 1 tsp sea salt flakes
  • 1 star anise, seeds crushed
  • 4 tbsp cornstarch
  • For the dipping sauce
  • 1 chopped red chilli
  • 2 tbsp each of sesame oil, soy sauce and rice vinegar
  • 1 crushed garlic clove
  • 1 tsp sugar
  • Toss the prawns in the sesame oil and thread onto 4 skewers. Mix together the salt, peppercorns, star anise and chilli with the cornstarch, then roll the prawn skewers in the mixture to coat. Combine the dipping sauce ingredients in a small bowl.
  • Heat up a barbecue or griddle, and brush with a little oil. Grill the prawn skewers for 2 mins or until pink, crispy and cooked through. Serve immediately with your dipping sauce and some lime and coriander.
