  • 4 slices of sourdough
  • 1 garlic clove, halved
  • 120g ripe tomatoes
  • 140g sardines in olive oil
  • ½ red onion, sliced
  • 8 pitted olives
  • Chopped parsley
  • Heat up a griddle pan and griddle the bread until nicely char-lined. Rub all over with the cut side of the garlic clove, then grate the tomatoes over the bread and spread over each of the slices.
  • Carefully top with the sardine fillets - try not to break them up too much - and a splash of the olive oil from the tin. Scatter with sliced onion, the olives and parsley, then serve immediately with a good grind of black pepper. Yum!
