Satay Seitan Skewers
- 1 tbsp lemongrass paste
- 1 tbsp lime juice
- 1 tbsp oil
- 200g seitan cubes
- For the Sauce
- 60g crunchy peanut butter
- 1 tsp soy sauce
- 15g grated ginger
- 1 tsp sriracha or similar
- Mix the lemongrass paste, oil and lime juice in a dish, then add the seitan and toss to coat. Leave to marinate for at least 20 mins. When ready, thread the seitan cubes onto skewers and place on a hot oiled griddle. Cook for 5 mins, turning occasionally until lightly charred.
- Meanwhile, make the sauce by mixing the ingredients in a small saucepan. Add 5 tbsp of water and cook on a low heat for 2 minutes, then serve as a dipping sauce for your skewers.
