Satay Seitan Skewers

  • 1 tbsp lemongrass puree
  • 1 tbsp fresh lime juice
  • 1 tbsp sunflower oil
  • 200g smoked seitan, cut into chunks
  • 60g crunchy peanut butter
  • 1 tsp dark soy sauce
  • 15g fresh ginger, grated
  • 1 tsp chilli sauce
  • Make your marinade by tossing together the lemongrass, lime juice, and oil in a shallow dish. Add the seitan, and toss well. Leave for 15 minutes, then thread the seitan pieces onto skewers, and place on a hot griddle or barbecue for 5 minutes until charred and cooked through.
  • Make the sauce by adding all the ingredients to a small saucepan, along with a few tbsp of water. Cook on a low heat for a minute or two, adjusting the level of chilli heat to your liking. Serve the skewers with a good drizzle of sauce, or use it as a dip.
