Ingredients
Method
- 4 tbsp olive oil
- 8 quality pork sausages
- 2 sliced red onions
- 3 crushed garlic cloves
- 2 tbsp red wine vinegar
- 400g tin of chopped tomatoes with garlic and herbs
- Pinch of sugar
- 400g tin of white beans
- 100g cherry tomatoes
- 50g fresh breadcrumbs
- 20g chopped rosemary, thyme and sage
- 20g grated parmesan
- Add a tbsp of oil to a casserole and brown the sausages all over for 8 mins. Set aside. Chuck the onions in the casserole to cook for 5 mins, then stir in 2 crushed garlic cloves and cook for a couple of mins more. Add the vinegar, tomatoes, 200ml water and the sugar, then simmer for 5 mins on a medium heat. Stir in the beans and tomatoes, return the sausages to the pot, and cook for 15 mins on a lower heat.
- Heat the grill. Mix the breadcrumbs with the herbs and parmesan, then sprinkle over the sausage casserole. Grill for 5 mins until crisp, then serve.
