Sausage, Kale and Blue Cheese Bake

  • 650g cauliflower florets
  • 180g shredded kale
  • 1 tbsp olive oil
  • 400g pork sausages, meat squeezed from the skins
  • 700g pre-made or homemade cheese sauce
  • 100g blue cheese, crumbled
  • Boil the cauliflower in salted water for 6 mins, adding the kale for the final minute. Drain. Meanwhile, fry the sausage meat in the oil for 5 mins or until browned.
  • Heat the oven to 200C and place the kale and cauliflower in a baking dish. Pour over the cheese sauce, season well and mix to combine. Scatter with sausage meat and blue cheese, then bake for 30 mins until golden and bubbling. Ultimate comfort food!
