Sausage, Kale, and Mash Pie

  • 4 big potatoes, peeled and cut into 3cm chunks
  • 2 tbsp olive oil
  • 6 sausages
  • 1 tbsp flour
  • 450ml chicken gravy
  • 150g kale, shredded
  • 3 sliced leeks
  • ½ tbsp wholegrain mustard
  • 3 tbsp milk
  • 50g smoked cheese, grated
  • Boil the potatoes for 12 mins or until tender, then drain and set aside. Meanwhile, heat 1 tbsp of oil in a casserole and pinch the sausages out of their skins into big chunks, and toss into the pan to sizzle for 8 mins or until golden. Add the flour, cook for 1 mins, then pour in the gravy and 100ml of water. Bring to a simmer, toss in the kale, and cook for 5 mins. Remove from the heat.
  • Fry the leeks in a separate pan in a splash more oil, and heat the grill to high. Mash the potatoes until smooth, and stir through the cooked leeks, mustard, and milk. Season well, and scoop and swirl the mash over the sausage mixture, then scatter with cheese and grill for 5 mins. Serve as a sharing dish with your favourite greens.
