Sea Bass Traybake with Soy and Greens

  • 2 tbsp soy sauce
  • 1 tbsp honey
  • ½ tsp wasabi paste
  • 2 tsp sesame seeds
  • 400g mixed green veg, e.g pak choy, asparagus, and snowpeas
  • 100g rice noodles
  • 4 sliced spring onions
  • 2 sea bass fillets or similar white fish
  • Preheat the oven to 220C. Whisk together the honey, soy, wasabi and sesame seeds in a bowl. Pop all of the greens in a baking tray, and toss with about 4 tbsp of water. Put in the oven, and cook for 10 mins. Meanwhile, cook the rice noodles to pack instructions.
  • Once the greens have become tender, drizzle with half the soy dressing and another tbsp of water. Toss in the half the spring onions, and place the fish fillets on top (skin side up) and then drizzle with the rest of the dressing. Sprinkle with more sesame seeds, and bake for 6 mins or until the fish is cooked and flaky. Drain the rice noodles, tip into the tray, and coat in some of the sauce. Scatter with the rest of the spring onions, and serve.
