Seoul Fried Rice

  • 2 tsp dark soy sauce
  • 10g gochujang chilli paste
  • 180g cooked white rice
  • 2 tsp toasted sesame oil
  • ½ bunch of spring onions, chopped
  • 2 crushed garlic cloves
  • ½ pointed cabbage, shredded
  • 150g beansprouts
  • 40g chopped salted peanuts
  • 2 fried eggs, to finish
  • Mix the chilli paste and soy sauce in a small bowl. Heat 1 tsp of oil in a frying pan and cook the spring onions and garlic for a minute or two, or until sizzling.
  • Toss the shredded cabbage into the pan and stir-fry for a couple of minutes, then tip in the cooked rice beansprouts and stir-fry for 3 mins more or until hot. Stir in the chilli mixture and peanuts, then tip into bowls and top with the fried eggs. Simple… but delicious!
