Ingredients
Method
- 500g firm white fish fillets, skin removed and flesh thinly sliced
- 250ml fresh lime juice
- 1 red onion, sliced into rings
- Handful of green olives, chopped
- 2 green chillies, finely chopped
- 2 tomatoes, deseeded and chopped
- Chopped coriander
- 2 tbsp olive oil
- Pinch of sugar
- Mix the sliced fish, lime juice and onion rings in a glass bowl. Cover with film and leave in the fridge for about 90 mins.
- Remove the fish and onion from the bowl and discard the lime juice. Place the sliced fish and onion in a serving bowl with the chillies, olives, tomatoes, olive oil and chopped coriander. Season with salt, pepper and a pinch of sugar, stir well, then serve with toast or tortilla chips.
