- 400g quality spaghetti
- 3 red chillies
- 3 cloves of garlic
- 5 tbsp extra virgin olive oil
- 1 tbsp chopped flatleaf parsley
- Bring a bit pot of very well salted water to the boil, then cook the spaghetti to pack instructions (be sure to leave it al dente). While the spaghetti is cooking, chop and deseed the chillies, and peel and finely chop the garlic.
- Cook the garlic and chillies for 3-4 minutes in the olive oil. When ready, drain the spaghetti, and tip the whole lot of pasta into the pan with the chillies and garlic. Mix well to coat the pasta with the oil, then season with salt and serve. Simple, quick, and utterly perfect!
