Ingredients
Method
- 2 tbsp quality mayo
- 2 chopped spring onions
- 1 tsp smoked paprika
- 15g chopped chives
- 1 lemon, zest and 1 tbsp of juice
- Dash of hot sauce
- 500g dressed crab meat
- 200ml crème fraîche
- Mix the mayonnaise, spring onions, chopped chives, paprika, lemon zest, juice and hot sauce in a large bowl. Gently fold in the crab meat, trying not to break it up too much. Add the crème fraîche until you have a thick, pate consistency, and season well.
- Divide the pate between 8 ramekins, then cover and chill in the fridge for at least half an hour. Garnish the portions with some extra chives and black pepper, then serve with toast or crackers.
