Ingredients
Method
- 4 medium barramundi fillets
- 1 tbsp olive oil
- 1 large lemon, thinly sliced
- 1 tsp salt and pepper
- Chopped parsley
- Green salad, to serve
- Preheat the oven to 200C. Lay out 4 sheets of foil and brush each one with olive oil. Place a barramundi fillet onto each sheet of foil, season with plenty of salt and pepper, then top each fillet with 4 slices of lemon plus a squeeze of the juice.
- Wrap each fish fillet tightly in the foil, then place on a baking tray and bake for about 25 mins, turning once halfway through the cooking time. Remove from the oven, unwrap the fish and serve immediately on plates with some green salad and crusty bread.
