Simple Swordfish and Mango Salsa

  • 1 tbsp olive oil
  • 2 swordfish steaks, approx 100g or similar firm fish
  • ½ mango, chopped
  • 2 sliced spring onions
  • 1 chopped red chilli
  • ½ lime, zest and juice
  • Handful of chopped coriander
  • Salad leaves
  • Rub the fish steaks with oil and season well, then griddle for 3 mins on each side, or until char-lined and cooked through.
  • Make the salsa by tossing together the mango, chilli, lime zest and juice, spring onions and coriander. Serve in a heap next to the grilled fish steaks and a pile of salad leaves.
