Simple Swordfish and Mango Salsa
- 1 tbsp olive oil
- 2 swordfish steaks, approx 100g or similar firm fish
- ½ mango, chopped
- 2 sliced spring onions
- 1 chopped red chilli
- ½ lime, zest and juice
- Handful of chopped coriander
- Salad leaves
- Rub the fish steaks with oil and season well, then griddle for 3 mins on each side, or until char-lined and cooked through.
- Make the salsa by tossing together the mango, chilli, lime zest and juice, spring onions and coriander. Serve in a heap next to the grilled fish steaks and a pile of salad leaves.
