Simple Trout with Capers
- 4 trout fillets
- 100g salted butter
- ½ lemon, juice only
- Handful of chopped parsley
- 2 tbsp capers, rinsed
- Preheat the oven to 200C. Place the fish fillets in a roasting tray with some seasoning and dotted with a third of the butter. Roast for 10 mins.
- Melt the remaining butter in a frying pan and cook until brown and nutty. Remove from the heat and stir in the lemon juice, capers and parsley. Pour over the fish, then serve with new potatoes and green beans.
