Sirloin Steak with Mustard Sauce

  • 4 sirloin steaks
  • 1 tbsp groundnut oil
  • 50g baby spinach leaves
  • 1 tbsp chopped chives
  • For the Sauce
  • 200ml crème fraîche
  • 2 tsp Dijon mustard
  • 1 tbsp crushed peppercorns
  • Squeeze of lemon
  • Rub the steaks with the oil and some seasoning, then sear for 90 seconds in a very hot pan before flipping and cooking for 2 mins more on the other side (for medium-rare). Remove and leave to rest for 3 mins.
  • Meanwhile, mix the ingredients for the sauce in a small saucepan and simmer for a minute. Remove from the heat, stir in the lemon juice and the resting juices from the steaks, and season to taste. Arrange the spinach on 4 plates and sit the steaks on top, then spoon over the sauce and serve with a pile of chips and a sprinkling of chives.
