Slow-Cooked BBQ Pulled Pork Bao Buns

  • 1.2kg boneless pork shoulder
  • 2 tbsp smoked paprika
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground cumin
  • Salt and pepper
  • 250ml apple cider vinegar
  • 3 tbsp tomato sauce
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 12 store-bought bao buns
  • Pickled cucumber, sliced spring onions and sesame seeds, to serve
  • Mix the paprika, brown sugar, garlic powder, onion powder, cumin, salt and pepper. Rub all over the pork. Place in a slow cooker with the apple cider vinegar, cover and cook on low for 8 hours until falling apart.
  • Remove the pork and shred with two forks. Combine the tomato sauce, soy sauce and honey in a small pan over medium heat and simmer for 5 minutes. Pour half over the pulled pork and toss to coat.
  • Steam the bao buns according to packet instructions. Fill each with pulled pork, pickled cucumber and spring onions. Drizzle with extra sauce and scatter with sesame seeds.
