- 600g beef mince (80/20 fat ratio if you can find it)
- 4 burger buns, split and toasted
- 4 slices American cheese(or a good melting cheddar)
- 4 tbsp American-style yellow mustard
- 8 dill pickle slices
- ½ white onion, finely diced
- Salt and black pepper
- Divide mince into 8 equal balls. Season generously with salt and pepper. Heat a cast iron pan or griddle over high heat until smoking. Place 2 balls in the pan and smash flat with a spatula. Cook for 2 minutes until a crust forms. Flip, immediately lay a cheese slice over each patty, and cook for another 90 seconds until melted.
- Repeat with remaining patties. Each burger gets two stacked smashed patties. Spread mustard on bun bases, stack the double patties, and top with pickles and diced onion.
