Smoked Ham and Lentil Leftovers Casserole

Ingredients

Method

  • 1 tbsp olive oil
  • 1 chopped onion
  • 1 chopped celery stalk
  • 2 tsp smoked paprika
  • 1 tbsp mustard
  • 2 chicken stock cubes
  • 150g cooked smoked ham, cut into chunks
  • 350g roasted root veg, eg. carrots, potatoes, parsnips etc
  • 200g cooked puy lentils
  • Bunch of parsley, chopped
  • Heat the oil in a large pan and cook the celery and onion for 10 mins to soften. Add the mustard and paprika, cook for 30 seconds, then crumble in the stock cubes and add 1 litre of water along with the chopped ham. Simmer for 10 mins.
  • Tip in the vegetables and lentils, season to taste, and leave to bubble away for another 10 mins or so. Stir in the parsley, and serve in bowls with crusty bread.
