Ingredients
Method
- 400g radishes
- 500g baby potatoes, halved
- 4 tbsp olive oil
- 3 tbsp Greek yoghurt
- Juice of ½ a lemon
- 1 crushed garlic clove
- ½ pack of dill, chopped
- 2 bags of lambs lettuce or similar soft salad leaves
- 300g smoked mackerel, skinned and flaked
- Preheat oven to 220C. Pop the radishes and potatoes in a roasting tin, drizzle with 2 tbsp of oil, and season well. Roast for 30 mins, until tender and golden. Meanwhile, make the dressing by whisking the remaining oil with the lemon juice, yoghurt, garlic, dill, and seasoning.
- Remove the veggies from the roasting tin. Toss the lettuce in your dressing, top with the potatoes and radishes, and then the flaked fish. Sprinkle with some more dill, and serve.
