Smoked Salmon on Rye with Fennel and Grapefruit

Ingredients

  • 300g sliced smoked salmon
  • 2 small fennel bulbs, peeled into ribbons
  • 2.5 pink grapefruits, segmented (juice reserved)
  • 8 toasted slices of dark rye bread
  • For the Dressing
  • 1 tsp mustard
  • 3 tbsp olive oil
  • 3 tbsp each chopped dill and parsley
  • Make the dressing by mixing the mustard, olive oil and herbs in a small bowl with 3 tbsp of the grapefruit juice and some seasoning. Set aside.
  • Toss the smoked salmon slices, grapefruit segments and fennel in a bowl, and mix in 4 tbsp of your freshly-made dressing. Place a slice of toasted rye bread on each plate, drizzle with a little oil and spoon the salmon mixture on top. Drizzle with the remaining dressing and scatter with chopped fennel fronds or more dill - delicious!
