Smoked Tofu and Puy Lentils
- Dash of olive oil
- 1 zucchini, diced
- 100g diced smoked tofu
- ½ tsp smoked paprika
- 1.5 tbsp balsamic vinegar
- 250g cooked puy lentils
- 1 chopped red onions
- 1 roasted red capsicum from a jar, sliced
- Handful of pea shoots, to serve
- Add a splash of oil to a pan and cook the zucchini, tofu and smoked paprika for a few mins. Stir in the vinegar, leave to sizzle and reduce, then mix to combine. Tip the lentils, onion and capsicum into a bowl, and toss together. Add the tofu and zucchini, toss again, then scatter with pea shoots to serve.
