Smoked Tofu Fajitas
- 1 tbsp oil
- 2 onions, each cut into 12 wedges
- 2 red peppers, sliced
- 1 bunch of coriander, leaves picked and stems chopped
- 2 tsp cumin
- 1 tsp smoked paprika
- 200g smoked tofu, cut into bite-sized chunks
- 400g tin of cherry tomatoes
- 400g tin of kidney beans, drained
- 1 tbsp brown sugar
- Flour tortillas and salsa, to serve
- Heat the oil in a frying pan and cook the onions and peppers, with plenty of seasoning, for 8 mins. When tender and starting to char, add the coriander stems and cook for 1 minute before stirring in the spices and cooking for 2 mins more.
- Tip in the tofu, tomatoes, beans and sugar. Cook for 5 mins - you want the sauce fairly dry and the tofu piping hot. Warm the tortillas in the oven, and serve the mixture wrapped inside the tortillas with all your favourite fajita sides.
