Smoky Bacon, Tomato, and Paprika Spaghetti

- 400g spaghetti
- 1 tbsp olive oil
- 130g smoky bacon, sliced into matchsticks
- 1 chopped garlic clove
- 1 chopped onion
- 2 tsp sweet smoked paprika
- 2 x 400g tins of chopped tomatoes
- Grated parmesan to serve
- Cook the spaghetti in salted boiling water until al dente. Meanwhile, heat the oil in a frying pan and fry the bacon for 4 mins, until starting to crisp. Stir in the onion, cook for 4 mins more, then add the paprika and garlic for another minute. Pour in the tomatoes, and allow it to bubble away for 5-10 mins to thicken. Drain the pasta and toss with your sauce, before grating over lots of parmesan to serve.
