Southern Sausage Stew
- Olive oil
- 4 pork and herb sausages
- 1 onion, chopped
- 1 celery stalk, chopped
- 1 green capsicum, chopped
- 2 cloves of garlic, chopped
- 150g cooked brown rice
- 1 tsp smoked paprika
- 1 green chilli, chopped
- 350ml veg stock
- 200g tomatoes, roughly chopped
- 1 tbsp flour
- 1 tbsp red wine vinegar
- 2 spring onions, chopped
- Fry the sausages until browned all over. Once cooked, remove from the pan and replace with the vegetables, garlic, chilli and paprika, and fry in some oil for 10 mins or so.
- Sprinkle the flour all over the cooked veggies, then stir well before tipping in the vinegar, tomatoes, stock and the sausages. Bring up to a simmer, and cook for 10 mins or until the tomatoes have broken down. Scatter with spring onions and serve immediately with brown rice - gorgeous!
