Soy and Mushroom Burgers



  • 1 red onion, sliced
  • ½ tsp sesame oil
  • ½ tbsp soy sauce
  • ½ tbsp butter
  • 2 tbsp quality oyster sauce
  • 4 big mushrooms, peeled and stalks removed
  • 1 zucchini, sliced lengthways into 4
  • 4 buns
  • Chilli mayo and salads, to serve
  • Stir-fry the onions in the sesame oil until very tender - about 8 mins - then set aside. Meanwhile, put the butter and soy sauce in a pan and melt together, then stir in the oyster sauce. Brush this mixture all over the mushrooms, and leave for a couple of mins to absorb. Heat the grill to a high setting, and grill the mushrooms for about 10 mins, or until tender.
  • Griddle the zucchini slices until they blister and have nice char-lines along them. Warm the burger buns, then slather with chilli mayo, and fill with salad, your chargrilled zucchini, and your basted mushrooms.
