Soy-Braised Mushrooms
- 50g butter
- 6 large flat mushrooms
- 6 chopped spring onions
- Thumb-sized piece of ginger, chopped
- 1 red chilli, deseeded and chopped
- 3 tbsp dark soy sauce
- Pinch of sugar
- 150g basmati rice
- 2 tsp sesame oil
- Melt the butter in a large pan and fry the mushrooms for 4 mins, turning once as they cook. Add about half the spring onions, all the chilli, ginger, soy sauce and sugar, and turn the mushrooms in the sauce to coat.
- Meanwhile, cook the rice according to packet instructions. When ready, stir through the remaining spring onions and the sesame oil. Spoon the rice into bowls, top with the mushrooms and spoon over plenty of the glossy sauce from the pan. Sprinkle with more spring onion and serve.
