Spanish Pork Ribs

  • 800g pre-cut pork spare ribs
  • 3 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 2 tbsp tomato puree
  • 2 tbsp soy sauce
  • 1 tsp cayenne pepper
  • 1 tbsp brown sugar
  • 2 tsp smoked paprika
  • Salt and pepper
  • Place all the ingredients except the ribs in a large bowl and mix well, seasoning liberally. Add the ribs to the bowl, stir to coat, cover and leave to marinate overnight.
  • Preheat the oven to 180C and transfer the ribs and marinade to a roasting tin. Cover with foil and roast for 20 mins, then remove the foil and roast for 5 mins more. Once brown, sticky and cooked through, serve with your choice of sides.
