Spanish Style Sardines on Toast Recipe

What you'll need:

  • 1 chopped garlic clove
  • 1 tbsp olive oil
  • 1 red chilli, chopped and deseeded
  • Zest and juice of 1 lemon
  • 2 x tins of quality sardines (in sunflower oil), drained
  • Half a small bunch of parsley, chopped
  • 4 x slices of sourdough bread
Time: 5 minutes
Serves: 2

Method

First

In a frying pan, get your olive oil nice and hot. Lightly sizzle your garlic, and chuck in the red chilli, too. Once softened, add the lemon zest, and give it all a good stir.

Second

Add the sardines to the pan, and heat through for a few minutes.

Third

While the sardines are heating up, stick the sourdough in the toaster. Throw the chopped parsley over the sardines, stir well (but try not to break up the fish), squeeze the lemon juice over the top, and then divide the mixture over the slices of toast. Delish!
