Ingredients
Method
- 4 tbsp flour
- 1 tsp ground turmeric
- 1 lemon, grated zest only
- 400g piece of cod loin, cut into 4 fillets
- Olive oil for brushing
- 4 tbsp mayo
- Pinch of chilli flakes
- 4 ciabatta rolls, halved and lightly toasted
- 1 large tomato, sliced
- Pickles and sides, as you fancy
- Mix the turmeric, flour, lemon zest and chilli flakes on a plate and season well with salt and pepper. Coat the fish fillets in the season flour, then brush with olive oil. Barbecue in a basket for 2-3 mins on each side, or until cooked through and flaky, or alternatively fry in a glug of oil for 4 mins on one side and 2 on the other.
- Serve in a ciabatta roll with a slick of mayo, a slice of tomato and any chutneys or pickles you fancy. Yum!
