Spiced Cod Burgers Recipe

What you'll need: * 4 tbsp olive oil [https://www.bbcgoodfood.com/glossary/olive-oil] * 3 tbsp Greek yoghurt * 1 ½ tsp tandoori masala [https://www.thespruceeats.com/tandoori-masala-spice-mix-1957591] or similar * 2 x 100g pieces of cod fillet, skinless * 5 mint leaves, chopped * ¼ red onion, finely sliced * 100g pickled cucumber, drained

What you'll need:

  • 4 tbsp olive oil
  • 3 tbsp Greek yoghurt
  • 1 ½ tsp tandoori masala or similar
  • 2 x 100g pieces of cod fillet, skinless
  • 5 mint leaves, chopped
  • ¼ red onion, finely sliced
  • 100g pickled cucumber, drained
  • 4 slices of brioche
  • Salt and pepper
Time: 30 minutes
Serves: 2

Method

First

In a medium bowl, add 2 tbsp oil, the spices, 1 tbsp Greek yoghurt, and a decent pinch of salt. Stir well, then add the cod and coat thoroughly.

Second

Add the rest of the oil to a non-stick pan and put on a medium heat. Gently cook the cod for 3 minutes on each side, then remove from the heat, set aside on a plate and cover in foil.

Third

In another bowl, add the onion, mint, pickled cucumbers, and plenty of salt and pepper.

Fourth

Lightly toast the brioche. Spread the remaining 2 tbsp of yoghurt over one side, top with the fried cod, and then with the onion, mint, and pickle mix. Close the sandwich with the remaining brioche slice, and enjoy!

We think these burgers would go well with the complex Vinedos de los Vientos Chardonnay 2016. This wine is a winner with lightly spiced cod! Delicious!
