Spiced Lamb Kofta

  • 500g lamb mince
  • 1 diced onion
  • ½ tsp cayenne pepper
  • 2 tsp each ground cumin and coriander
  • 4 pitta, lightly toasted
  • Coleslaw, to serve
  • Add the lamb mince to a large bowl and mix with the onion, cumin, coriander, cayenne pepper and some seasoning. Combine with a fork, then shape into 8 chunky sausages with damp hands.
  • Thread the sausages onto pre-soaked wooden skewers. Preheat the grill or barbecue, and cook the koftas for 10 mins, turning regularly until cooked evenly. Stuff into pittas and serve with coleslaw or garlic sauce, and any sides you fancy.
