Spiced Tomato and Green Bean Stew
- 2 tbsp olive oil
- 1 head of garlic, cloves sliced
- 400g green beans, trimmed
- 2 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp ground turmeric
- 400g tomatoes, chopped
- 400g tin of chopped tomatoes
- 1 tsp sugar
- Salt and pepper
- Harissa oil to serve
- Toasted peanuts, to serve
- Heat the oil in a saucepan and add the garlic, then stir-fry for 2 minutes to soften. Chuck in the beans and cook for 5 minutes, then add the spices, tomatoes, tinned tomatoes, sugar, and plenty of seasoning.
- Simmer for 20 minutes, then serve in bowls with a drizzle of harissa oil and some sprinkled peanuts.
