Ingredients
Method
- 1 lemon, zest and juice, plus 2 lemons, halved
- 1 chopped red chilli
- 1 crushed garlic clove
- 2 tbsp olive oil
- 8 x prepared whole sardines
- Tabasco sauce
- Salad leaves, to serve
- Mix the lemon zest and 2 tsp of juice with the garlic, oil and chopped chilli, then season with salt and pepper. Slash the sardines and rub with the lemon and chilli mixture, making sure to rub well into the slits and belly cavities.
- Good the sardines on a griddle pan or barbecue for 3 mins on each side, or until cooked through and flaking. Place the lemon halves on the fish for the last 3 mins of the cooking time, then drizzle with a few drops of Tabasco sauce and serve with salad leaves. Perfect!
