Ingredients
Method
- 1 tbsp olive oil
- 1 chopped onion
- 1.5 tbsp garam masala
- 2 crushed garlic cloves
- 500g cooked brown rice
- 400g roast turkey, shredded
- 1 lemon, juice only
- 200g baby spinach
- Bunch of coriander, chopped
- Natural yoghurt, to serve
- Heat the oil in a large frying pan and soften the onion for 5 mins. Add the garam masala and garlic, and fry for 2 mins more. Add the cooked rice and turkey with a splash of water, and cook for 3 mins.
- Add a squeeze of lemon and stir in the spinach to wilt, then add most of the coriander and mix well to combine. Season to taste, sprinkle with the rest of the coriander, and serve with a dollop of yoghurt - perfect!
