- 4 large potatoes, cut into small chunks
- 4 tbsp olive oil
- 2 corn cobs
- 140g watercress salad
- 200g sliced radishes
- 50g shaved parmesan
- 1 bunch of spring onions, sliced
- 2 x 300g sirloin steaks
- Mustard, to serve
- Preheat the oven to 200C. Add the potato cubes to a large baking sheet and drizzle with 3 tbsp of oil and some seasoning. Roast for 50 mins, turning once, until golden and crisp. Meanwhile, heat a griddle on the hob and rub the corn cobs with oil and seasoning. Griddle for 10 mins until nicely charred, then add to the oven for the final 10 mins of the cooking time.
- Mix the radishes, cheese, spring onions and watercress in a bowl and set aside. Season the steaks and rub with oil, then griddle for 2 mins on each side (for rare) and set aside to rest. When ready to serve, slice the kernels off the corn cobs with a sharp knife and toss into the salad. Slice the steaks, serve on plates and enjoy with the salad and some mustard on the side.
