Ingredients
Method
- 4 tbsp olive oil
- 60g capers
- 1 tsp paprika
- 4 chopped garlic cloves
- 1 chopped red chilli
- 750g squid, sliced into 0.5cm rings
- 2 lemons, 1 juiced, one sliced
- 10g chopped parsley
- Heat 2 tsp of oil in a frying pan and fry the capers for 1 min. Remove and transfer to a serving bowl with ½ tsp of paprika, and toss together. Wipe out the pan and heat 2 tbsp of oil. Stir-fry the garlic and chilli for 20 seconds, then add half the squid rings in an even layer. Cook for 1 minute, then stir fry for 3 mins until cooked through.
- Season well with salt, a squeeze of lemon and half the parsley. Mix together, transfer to a warm serving dish, and repeat with the remaining squid. Scatter with the capers, some more paprika and parsley, and serve with lemon slices.
