- 4 chicken breasts, cut into 3cm cubes
- 2 tbsp flour
- 40g piece of ginger, grated
- 4 chopped garlic cloves
- 6 tbsp soy sauce
- 5 tbsp runny honey
- Pinch of chilli flakes
- 1 lemon, juice only
- 1 tbsp oil
- Cooked rice and broccoli, to serve
- Add the chicken breast chunks to a bowl and sprinkle with the flour and some seasoning. Toss to coat. Mix the ginger, chilli, garlic, soy, honey and half the lemon juice in a separate bowl.
- Heat the oil in a wok and fry the chicken for 3 mins or until lightly golden all over. Tip the honey mixture into the wok and stir-fry for 10 mins - you want the chicken cooked through and the sauce thickened and sticky. Taste for seasoning and add more lemon juice if needed, then serve with steamed rice and some broccoli on the side.
